Enlightened Rigatoni Bolognese
8 Servings

1 1/2 tsp. olive oil
1/4 tsp. crushed red pepper
3 cloves garlic, minced
1/3 cup thinly sliced scallions
1/4 cup chopped red bell pepper
1 (6 oz. pkg.) hickory smoked tofu, sliced on an angle
1 (12 oz. pkg.) ground beef alternative
1 (25 oz. jar Basil Tomato Sauce
1 (14 1/2 oz. can) Italian stewed tomatoes
1/2 cup Merlot (red wine)
1 tsp. dried basil
1 tsp. dried oregano
1 (12 oz. pkg.) rigatoni pasta

Heat oil and crushed pepper, over medium high heat in a 4 quart saucepan, 1 minute. Add garlic, scallions, bell pepper, and sliced, baked tofu. Cook 3 minutes and add ground beef alternative. Cook mixture 5 minutes, stirring occasionally. Add tomato sauce, stewed tomatoes, wine, and seasonings. Reduce heat and simmer, with the lid slightly ajar, 10 minutes. Cook pasts according to package directions. Drain and toss with 2 cups of the sauce, reserving the rest for topping individual portions.
