Fudgy Chocolate Walnut Ring

Completely caffeine free, this luscious glazed chocolate cake is lovely garnished with fresh strawberries.

1 cup soymilk lite
2 Tbsp. lemon juice
2 1/2 cups whole wheat pastry flour
1 3/4 cups Wonderslim Cocoa
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1 1/4 cups lite silken tofu, drained
1/2 cup unsweetened applesauce
1/4 cup liquid Fruitsource
1 1/2 cups Florida Crystals
2 tsp. vanilla extract
1 Tbsp. egg replacer powder
1/4 cup water
1/2 cup walnut pieces
1/4 cup soy grits

Preheat oven to 350°, oil spray tube pan. Place soymilk in a small bowl or measuring cup; add lemon juice. Set aside. Mix the next 6 ingredients in a large bowl. Set aside. Place tofu in food processor and blend until smooth. Add the next 4 ingredients and pulse to mix, then blend. Whisk egg replacer powder in a small bowl until foamy. Add to tofu mixture with soymilk and blend thoroughly. Fold liquid ingredients into dry ingredients, just until mixed. Mix together nuts and soy grits and add to batter. Do not overbeat. Pour batter into prepared pan and bake 50 minutes, or until tester comes out clean. Cool in pan 20 minutes, then cool completely on rack. Glaze with Fudgy Chocolate Glaze (recipe follows)

Fudgy Chocolate Glaze
This is a quick and easy glaze with a rich chocolate flavor.

3 Tbsp. tapioca flour or arrowroot
1/3 cup Wonderslim cocoa
1/2 cup liquid Fruitsource
1 tsp. vanilla extract

Mix together tapioca flour and cocoa in a small bowl. Set aside. Heat Fruitsource in microwave 40 seconds or until hot (or in saucepan for a minute or so over low heat). Pour hot Fruitsource into cocoa mixture, whisking as you go. Whisk until a smooth syrup is formed and add extract. Cool slightly and drizzle over cooled cake. Refrigerate glazed cake, until ready to serve.
